In Liverpool they do "and take your own", essentially meaning keep about 20-50p of the change. Weird way of tipping.

Well not really. If you wanna have a drink in a higher standard of venue then you're probably gonna have to pay a bit more. Also if you live in a generally more expensive area.
I wouldn't mind paying £4-5+ quid a pint in a nice bar or pub on a sunny day for example, or in a nice restaurant.
I'm not knocking getting pissed cheaply but sometimes it's desirable to step up a level.

Bottle of Becks is £7 in the Savoy.
Paid £6+ for a pint of cider somewhere in Shoreditch a few years ago.
Struggle to find anywhere charging more than 4 quid on average UP NORTH.

I’m noticing a few bars discretely putting 2/3 of a pint on their menu. Order the pint and you are around £7.50 to £8 - flaming crazy!

There's a place called beer and burger store in Dalston. They have a load of craft beer from all over the world. There's a (big) bottle of beer in there for 30 quid
